Go blocky oldskool with From Software and check out Kings Field. I never realised they were behind this until about a week ago when the game popped into my head since recently finishing Demon's Souls.

I have no idea on what anyone else thinks but I found FromSoftware's offerings to be quite boring and void.
At least when I got rid of Kings Field on PS2 sealed it was worth it.

THE BEST METHOD to run PSX games (and everything else for that matter) is via Retroarch - http://buildbot.libretro.com/nightly/
If you have any questions on how to set it up on Windows please feel free to ask, its very easy.
I like the souls games because of the difficulty and the combat mechanics. I feel similarly about the combat mechanics for games such as shadow of mordor and assassin creed series... I guess I've been spoiled :p

Combat is good in Shadow of Mordor, but some AC combat is a little dodgy. Really like the AC series myself, although I always stealth as much as possible.
Have you played this?:

Spoiler warning:
Another PS2 1st person King's Fieldy game by a different company: Hungry Ghosts.
It's JPN only, has a good reputation, and an English fan translation patch available.
Combat sounds unusual/good, although when you ask for PS1/PS2 games, you might have to try to forget DS/AC type combat.
